HOW TO ROAST ACORN SQUASH
This recipe is seriously so simple. The ONLY step that you need to plan ahead for is roasting the squash. It takes about 45 minutes to roast in the oven. You literally just cut the squash in half, put a pat of butter on each side (or drizzle with olive oil), season with salt + pepper, and lay them on a baking sheet (flat side down). Put the squash in a 425 degree oven for 45 minutes.
HOW TO MAKE STUFFED ACORN SQUASH BOWL FILLING
While the acorn squash is cooking, begin to make the filling. In a large saucepan, brown the ground sausage. Add the chopped onions and minced garlic with a dash of olive oil to sauté for a few minutes, until they have become translucent.
Stir in the pumpkin puree, chicken stock, and a dash of salt.
Add in the cooked rice (these keep this recipe super simple!), and give the filling a stir.
Once the acorn squash is done cooking and cooling, use a fork or spoon to scoop out enough squash to make it into a little "bowl." Scoop the filling into each squash bowl.
Sprinkle the Acorn Stuffed Squash Bowls with freshly grated parmesan, and toasted pine nuts.
You can put the Stuffed Acorn Squash Bowls in a casserole dish, and broil in the oven for a few minutes to achieve a crispier finish. However, this step is totally optional and it will be delicious either way!
